Gluten Free Granola Bars - Cinnamon Raisin

I've been experimenting with gluten free granola bars, and I think I've come up with one I like. They are more of a breakfast bar than a granola bar, but they can't out pretty well. 

Oven: 350 degrees
Prep a 9x13 pan (spray with non-stick cooking spray or use parchment paper/spray)

  • 1/4 cup coconut flour
  • 3/4 cup all purpose gluten free flour mix
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 tbs ground cinnamon
  • 2 tbs butter or margarine
  • 1/2 cup brown sugar
  • 1 egg
  • 1/4 cup honey
  • 1/4 cup coconut oil
  • 1 tsp vanilla
  • 2 cups gluten free oats
  • 1 cup raisins (or chocolate chips, dried blueberries, etc).
Mix the dry ingredients above. Then add in butter, sugar, egg, honey, oil, and vanilla. Mix well. Add the oats and raisins.

Press into 9x13 pan and cook for 20-25 minutes.

Cut into bars - makes approx. 20
 


Intro

It's funny how certain things change your food habits, likes/dislikes drastically. A while back I was diagnosed with Celiac diseasae. Being raised in Southern Louisiana, I have always loved good rich food of all types - going gluten free is very different.

I decided to put together recipes that I enjoy -- which means they have to be things I can eat! This blog is really meant to be just that -- a collection of recipes of all different types and genres, but ones that even I can enjoy.
